Grapes: This white wine is 100% Piquepoul.

Soil types : The vineyards of Pomerols and Florensac are located near the lagoon of Thau in the Hérault départment. The terroir consists essentially of limestone-clay plateaus, rich in Cretaceous limestone and full of quartzes pebbles. The Mediterranean climate is accentuated here by lower rainfall and higher temperatures than average.

Vineyard management : Our winegrower partners cultivate around 50 hectares planted with a single grape-variety called “Piquepoul”. This is a very late-ripening variety with fine natural acidity even in hot years. Yield is at 60 hl/ha maximum.

Winemaking : Selection is enforced both in the vineyard and at the reception bay, where the addition of enzymes precedes a 6-hour long prefermentation steeping at 8°C, followed by static settling of the must and fermentation at low temperatures. Winemaking procedures are adapted towards the production of Piquepoul cuvées marked by this variety’s particular acidity and aromas. Other cuvées are stirred on their lees in order to enhance their structure. Final blending of the cuvées is decided upon by tastings prior to the bottling.

Tasting notes : A bright yellow colour tinged with green, and a subtle refreshing nose with fruity and floral aromas. Lively and aromatic on the palate with the fragrance of lemons and blossom, ending on a refreshing hint of delicate bitterness.

Serving temperature : 10- 12°C.

Food pairings : The full flavour of this wine is brought out alongside seafood and grilled fish.
